Central to the experience is the idea that creative beverages can serve as “liquid bridges” into the evening’s theme—and perhaps a story of your own. On the following pages are two of Chef Elli’s most enchanting cocktail recipes, designed to bring a touch of forest magic to your home.
HERBAL FORESTS COCKTAIL
Fresh herbs are infused into this drink in two ways: a vibrant botanical-infused spray added at the last moment, and a freshly-made syrup. This dual means of infusion builds deeper flavor layers and increases the complexity of the drink.
THE BUILD
In a mixing glass, combine the following:
1 ounce calvados (VS or VSOP)
1 ounce cognac
½ ounce rosemary thyme syrup (below)
¼ ounce smoky mezcal
(such as Del Maguey Vida)
THE SPECIAL COMPONENTS
Rosemary Thyme Simple Syrup Place 5 to 8 large rosemary sprigs and 10 to 15 thyme sprigs in 1 cup of sugar and 2 cups of hot water and soak for two days at room temperature. Strain and refrigerate. Mezcal Luster Spray Combine ½ cup mezcal, 8 dried hibiscus flowers, 2 rosemary sprigs, and 3 thyme sprigs in a quart container. Let soak for 24 hours to pull the color from the hibiscus and oils from the herbs. Add ¼ teaspoon of edible purple luster dust, strain, and store in a spray bottle. Shake well before each use.
THE PRESENTATION
Because this recipe contains no citrus, it is stirred rather than shaken. Stir with ice until thoroughly chilled (30 seconds). Strain into a rocks glass over a large, clear ice cube. For full thematic effect, use an ice press or stamp to mark the cube with a rune or other symbol of your choice. Finish with one spritz of the Mezcal Luster infusion over the ice to provide color and a botanical aroma.
